Creamy Tomato Soup image

Ingredients

  • 1 Tbsp. olive oil
  • 2 medium onions, chopped
  • 1 tsp. minced garlic
  • 1 tsp. dried thyme
  • 2 28-ounce cans whole peeled tomatoes (drain one can and reserve the juice from one can)
  • 1/2 cup Calorie Countdown 2% Reduced Fat Dairy Beverage
  • Salt and fresh ground black pepper, as desired
  • Fresh basil, if desired

Directions

In a medium stockpot, heat the oil over medium heat. Add onions, garlic, and thyme, and saute until onions are clear, about 4 to 5 minutes.

Add the tomatoes and the juice to the stockpot. Bring the mixture to a boil, then turn heat down and simmer for 10 minutes. Add the Calorie Countdown. Stir to combine.

Working in batches, add the soup to blender or food processor and blend on high speed until smooth.

To serve, ladel soup into bowls, season with salt and fresh ground black pepper, and garnish with fresh basil.
