Eggnog Pancakes

Ingredients
- 2 cups all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. ground nutmeg
- 1/2 tsp. salt
- 1/2 cup Hood® Low Fat Cottage Cheese
- 1 cup Hood® Golden Eggnog
- 1 cup Hood® 1% Lowfat Milk in the LightBlock Bottle
- 2 large eggs
- 4 Tbsp. butter, melted

STEP 1
In a large mixing bowl, combine flour, sugar, baking soda, baking powder, nutmeg, and salt. Reserve.

Place cottage cheese, eggnog, milk, eggs, and butter in a food processor. Blend until combined, about 45 seconds.

Add the cottage cheese mixture to the flour mixture and stir until just combined, but still slightly lumpy.

Coat griddle with cooking spray and heat to medium high heat. For each pancake, pour 1/4 cup batter onto griddle and spread batter to form a 5" pancake. Cook 3 to 5 minutes, until bubbles appear on the surface. Turn pancakes over with a spatula and cook 2 to 4 minutes longer to brown the other side.
