Fig and Prosciutto Crostini
- 1 baguette
- 3 tablespoons olive oil
- 2 cups Hood® Country Style Cottage Cheese
- 1 pint fresh figs sliced
- 6oz thinly sliced prosciutto
- 1/4 cup honey
- 1/4 cup of baby arugula
- fresh cracked black pepper
Preheat oven to 350°F.
Slice the baguette about 1/3 to 1/2 inch thick. Lightly brush olive oil on each slice and arrange a single layer on your baking sheet.
Bake until golden and crisp, about 10-12 minutes. Allow the toasts to cool to room temperature.
Spoon Hood Country Style Cottage Cheese and top with sliced figs, arugula, and thinly sliced prosciutto. Drizzle with honey and sprinkle fresh ground black pepper.
*If figs are not available or in season, apricots also work well!
