Fruit Pizza image

Ingredients

  • 1 16.5 oz. tube refrigerated sugar cookie dough
  • 1 cups Hood® Country Style Cottage Cheese
  • 2 Tblsp honey
  • 4 cups fresh fruit, such as strawberries, blueberries, mango, raspberries, blackberries, nectarines, and grapes
  • 1 sprig fresh mint, for garnish

Directions

  • STEP 1

    Preheat oven to 350˚F. Line a 14-inch round pizza pan with parchment paper. (Or grease the pan if you don’t have parchment.)

  • STEP 2

    Spread the cookie dough over the pan, leaving at least 1 inch of space around the edges. A rolling pin helps makes the top smoother.

  • STEP 3

    Bake the crust for 16-20 minutes, or until golden brown. Let the crust cool completely, at least 30 minutes.

  • STEP 4

    While the crust is cooking, place the cottage cheese and honey in a food processor or blender and blend until smooth, about 30 to 60 seconds. Set aside.

  • STEP 5

    Transfer the cookie crust to the surface you will be using to serve it but carefully lifting the parchment paper and sliding the crust. Spread an even layer of cottage cheese on the cookie crust. Before topping with fruit, use a pizza cutter or sharp knife to cut crust into 8 slices. Slide the slices back into place to form a tight circle.

  • STEP 6

    Create a fun design using the fruit and don’t be afraid to let the fruit overlap from one slice to another. Once your design is complete, use a paring knife to carefully slice the fruit that is overlapping in between slices to make it easier for slices to be removed without disrupting the design. Top with fresh mint and serve.
