No-Bake Chocolate Oatmeal Energy Bites image

Ingredients

  • 2 cups sugar
  • 1 cup Simply Smart® 1 % Lowfat Milk
  • 10 Tbsp. unsweetened cocoa powder
  • 2 tsp. vanilla extract
  • 2 cups crunchy peanut butter
  • 6 cups quick-cooking oats, raw
  • 2/3 cup finely chopped peanuts

Directions

  • STEP 1

    In a medium saucepan, combine sugar, milk, and cocoa powder over medium heat. Bring to a boil. Cook, whisking constantly, for 2 minutes. Remove from heat. Stir in vanilla extract.

  • STEP 2

    Add peanut butter and oats to a large mixture bowl. Add the sugar/milk mixture. Stir, combining well. Divide batter into 48 pieces and roll into balls. Roll each ball into chopped peanuts. Let cool until hardened. Refrigerate until ready to eat.

  • PREP TIP

    Use Simply Smart Fat Free Chocolate Milk in place of plain for an even richer chocolate flavor.
