Roasted Butternut Squash Pizza
- 2 cups butternut squash, cut into 1-inch pieces
- 2 tsp. olive oil
- 1/2 tsp. dried thyme
- 1/4 tsp. salt
- 1 cup Hood® Low Fat Cottage Cheese
- 1/2 cup grated Parmesan cheese
- 2 large prepared whole wheat Naan breads or large whole wheat pita bread
Preheat oven to 400˚F. Coat a large baking sheet with vegetable spray.
Place squash, olive oil, thyme and salt in a medium mixing bowl. Toss to coat the squash with the oil and seasonings. Roast for about 15 minutes or until fork-tender.
Place the cottage cheese, Parmesan cheese, and parsley in a small food processor or blender. Blend until smooth, about 1 minute.
Spread half of the cottage cheese mixture on each of the Naan breads. Top with cooked squash. Place pizzas on the baking sheet and return to the oven. Cook for 15 minutes or until the edges of the bread are brown and crispy. Allow to cool. Serve warm.
