Salmon Fettuccine with Sour Cream Caesar Sauce

Ingredients
- 8 oz fettuccine noodles
- 8 oz salmon filet
- fresh ground black pepper
- 1 tbsp olive oil
- sour cream caesar sauce (recipe below)
- 5 slices bacon, cooked crisp and crumbled
- 1 tbsp finely chopped parsley
- 1/4 tbsp fine chopped basil
Sour Cream Caesar Sauce
- 3/4 cup Hood Sour Cream
- 3 garlic cloves, minced
- 1 tbsp freshly squeeze lemon juice
- 1 tbsp dijon mustard
- 1 tsp anchovy paste
- 1 tbsp grated parmesan cheese

In a medium bowl, whisk together the sour cream, garlic, lemon juice, mustard, anchovy pasta, and cheese until well combined. Cover and refrigerate until ready to use.

For the pasta, bring a large pot of lightly salted water to a boil. Add fettuccine and cook for about 5 minutes, or until pasta is al dente (slightly chewy). Drain pasta and return to pot. Cover.

While pasta is cooking, sprinkle salmon with pepper.

Heat oil in a nonstick skillet over medium heat. When oil is hot, place salmon in pan. Cook for about 3-4 minutes and flip. Continue to cook until salmon is firm to the touch, about 2-3 minutes.

Flake the salmon into small pieces and add to the pot with the fettuccine, along with the sour cream Caesar sauce, crumbled bacon, parsley, and basil. Toss until all ingredients are combined and coated with the sauce.
