Savory Stuffed Tomatoes

Ingredients
- 2 large tomatoes
- 2 tsp. olive oil
- 2 tsp. lemon juice
- 2 tsp. chopped fresh chives, divided
- 1/4 tsp. fresh ground black pepper
- 2/3 cup Hood® Cottage Cheese with Chive
- 1/2 cup peeled, diced cucumber
Directions

STEP 1
Trim 1/2-inch off the top of each tomato and remove the core. Scoop out most of the flesh to make a bowl.

Discard fluid and dice the remaining tomato flesh. Reserve.

In a medium bowl, whisk together the olive oil, lemon juice, 1 teaspoon chives, and black pepper.

Add diced tomato, cottage cheese, and cucumber. Mix well.

Place equal amounts of the cottage cheese mixture in the two tomatoes. Top each tomato with remaining chives.
