Scalloped Potatoes image


  • 1/2 medium onion, chopped
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • Fresh ground black pepper, to taste
  • 2 Tbsp. all purpose flour
  • 1 1/2 cups Hood® Country Creamer®
  • 3 medium potatoes, peeled and thinly sliced


  • STEP 1

    Preheat oven to 350°F. Coat a 1-quart casserole dish with cooking spray.

  • STEP 2

    In a medium saucepan, sauté onion in butter over medium heat until translucent, about 3 to 5 minutes. Add salt and pepper and stir to combine. Add flour and country creamer and cook until the mixture is thick and bubbly, about 5 minutes, stirring constantly. Remove from heat.

  • STEP 3

    Place half the potatoes in the casserole dish, and cover with half the country creamer mixture. Repeat.

  • STEP 4

    Cover with aluminum foil and bake for 35 minutes. Remove foil and bake for an additional 30 minutes. Let stand for 10 minutes before serving.
