Sour Cream Lemon Squares
Preheat oven to 350°F. Coat an 8-inch square baking pan with cooking spray.
To make the crust, combine the flour, butter, and powdered sugar using an electric mixer. Blend well and press into the baking pan. Bake 15 to 20 minutes or until golden brown.
Meanwhile, beat together the eggs, sugar, ¼ cup sour cream, flour, baking powder, salt, lemon juice, and lemon zest until light and fluffy. Pour the filling into the hot crust and bake an additional 25 minutes or until no imprint remains when you lightly touch the filling. Cool for 10 minutes.
In a small mixing bowl, combine ½ cup sour cream and sugar to make the glaze. Spread the glaze evenly over the lemon squares. Return to oven and bake for 5 minutes. Cool completely in the pan on a wire rack before cutting.
