Dark Chocolate Brownies with Peppermint Whipped Cream

Brownies:  

  • 1 18-oz. package dark chocolate fudge brownie mix
  • Water, oil, and egg(s) called for by the brownie mix

Topping:

  • 1 cup Hood Heavy Cream
  • ¼ cup powdered sugar
  • ¼ tsp. pure peppermint extract
  • 16 round red and white peppermint candies, crushed (or other red and white peppermint candy)

Preheat oven to 350˚F. Coat an 8” X 8”-inch baking pan with cooking spray.

Prepare brownies according to package directions. Transfer the brownie batter to the baking pan. Bake according to package directions. Cool in the pan on a wire rack for 30 minutes. 

While brownies are cooking, place the mixing bowl and beaters of an electric mixer in the refrigerator or freezer. 

Just before serving, remove the bowl and beaters from the refrigerator.  Place the cream, powdered sugar, and peppermint extract in the bowl. Beat on high speed just until stiff peaks form.

Cut brownies into 12 pieces and remove from pan. Top each brownie with the peppermint whipped cream and crushed peppermint candy.
