Cottage Cheese Biscuit Sandwich image


For Assembly


  • STEP 1

    Preheat oven to 425 degrees. Line a baking sheet with parchment paper.

  • STEP 2

    In a food processor, combine the flour, baking powder, and salt. Pulse until combined. Add cold butter cubes and pulse until it resembles coarse crumbs. Transfer to a mixing bowl.

  • STEP 3

    Add Hood® Cottage Cheese with Everything Bagel Seasoning and mix until just combined and the dough just comes together into a ball.

  • STEP 4

    Transfer the dough to a lightly floured surface and shape into a rectangle that is 3/4 inch high. Cut biscuits into 6 squares or rounds.

  • STEP 5

    Arrange cut biscuits onto the prepared baking sheet and brush a lightly with milk. Bake for 20 minutes or until golden brown. Remove from the oven and cool.

  • STEP 6

    In a medium bowl, whisk 6 eggs. Add 1/4 cup cottage cheese and salt and whisk until well combined.

  • STEP 7

    In a medium non-stick pan over medium heat, add 1 teaspoon of oil or 1 tablespoon of butter. Pour egg mixture into the greased pan and cook, stirring gently. Remove scrambled eggs and set aside.

  • STEP 8

    Split biscuits and spread a dollop of Hood® Cottage Cheese with Everything Bagel Seasoning to the bottom half. Add scrambled eggs, turkey bacon (optional), and then cover with the biscuit top to create a sandwich.
