Cottage Cheese Biscuit Sandwich
- 2 cups All Purpose flour
- 1 Tablespoon baking powder
- ½ teaspoon salt
- 6 Tablespoons cold butter cubed
- 1 ¼ cup Hood Cottage Cheese with Everything Bagel Seasoning
- 2 tablespoons milk (for brushing)
- 6 eggs
- ¼ cup Hood Cottage Cheese with Everything Bagel Seasoning
- salt and pepper to taste
- 6 slices of cooked turkey bacon (optional)
Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
In a food processor, combine the flour, baking powder, and salt. Pulse until combined. Add cold butter cubes and pulse until it resembles coarse crumbs. Transfer to a mixing bowl.
Add Hood Cottage Cheese with Everything Bagel Seasoning and mix until just combined and the dough just comes together into a ball.
Transfer the dough to a lightly floured surface and shape into a rectangle that is ¾ inch high. Cut biscuits into 6 squares or rounds.
Arrange cut biscuits onto the prepared baking sheet and brush a lightly with milk. Bake for 20 minutes or until golden brown. Remove from the oven and cool.
In a medium bowl, whisk 6 eggs. Add ¼ cup cottage cheese and salt and whisk until well combined.
In a medium non-stick pan over medium heat, add 1 teaspoon of oil or 1 tablespoon of butter. Pour egg mixture into the greased pan and cook, stirring gently. Remove scrambled eggs and set aside.
Split biscuits and spread a dollop of Hood Cottage Cheese with Everything Bagel Seasoning to the bottom half. Add scrambled eggs, turkey bacon (optional), and then cover with the biscuit top to create a sandwich.
